Hey Peeps! Hope everyone is doing well out there !! Today we are pairing Broccoli and Lemon Pesto Linguine with a single varietal, crisp white from Argentina. The Pasta has a lot of root vegetables,(Broccoli, Celery, Carrots, Garlic,  & Onions) and has an olive oil and fresh seasonings base with added lemon juice. The celery, broccoli, and lemon really bring out and highlight some of the characteristics in this wine. This dish is light and healthy but still very satisfying!! It is a quick summer or fall plate that is fairly easy and quick to prepare. Once the Root vegetables are cleaned and cut its just about cooking them appropriately. Larger vegetables will take longer to cook and you need to add them first to the mix. Then add the medium and smaller size vegetables into the skillet. This will ensure that all of the ingredients have been cooked thoroughly and evenly. Once the Pasta has been served I open the chilled wine. This wine style from Argentina is called Torrontes. It is the dominant white grape grown in Argentina. It is Light and Refreshing. The wines crisp acidity with citrus and stone fruit peach and apricot highlight the primary ingredient flavors in this plate. A Great Spring and Summer recipe for when its a little warm, but this nice chilled Crios Torrontes will keep you cool!!! Fresh and Delicious!
