Ingredients
- Olive Oil
- Iodized Salt
- Garlic Powder
- Black Pepper
- Fresh or Dried Oregano
- Asparagus
- Baby Bella or Crimini Mushrooms
- Peas
- Gnocchi Pasta
Preparation
Fill small pot with water and place on stove. Set temp to high and allow water to start boiling, add a pinch of salt, and the gnocchi pasta. ( Here I used a prepackage gnocchi, not quite as tasty as a freshmade pasta but close and so much easier to prepare). Note: ( You can also use a Penne, Rigatoni, or a Cavatappi pasta that will work well with this dish). Once pasta is in grab a medium saute pan and add 2 tbsp of olive oil to skillet. increase heat, and add cut asparagus to oil. Once the asparagus starts to cook I add Garlic Powder and Black Pepper to season the oil and asparagus. Allow the asparagus to cook mixing it occasionally. When the asparagus starts to look about half done I put in 2 cups of Baby Bella Mushrooms, ( Crimini or another style is good too ). Add more oil to mushrooms and let them cook evenly for a few minutes, then add peas, ( fresh or frozen ) pull pasta and add gnocchi and a touch of water from the pasta pot. Toss for a minute and reduce heat and allow to simmer. Serve Hot. This one is Quick, Easy to prepare, inexpensive, and Delicious.
