Sauteed Salmon with an Artichoke and Caper Pesto, Sweet Potato, Snow Peas, Cauliflower, and Broccoli #103

Preparation

Fill up a small pot with water and set temp to high.  Allow water to heat and start to boil. Cut sweet potato into slices and add them to water w a pinch of salt.  Let Boil. Usually around 18-20 minutes. As Potato is cooking, grab a medium sauce pan and add two tbsp of olive oil to skillet. Make sure salmon filet is Skinned, and deboned. Lightly season Fish with Garlic powder and Black Pepper  (both sides). Then add the fish to the skillet. On the other side of the skillet I added  Snow Peas, Cauliflower and Broccoli. add light Olive Oil and Black Pepper. As Veggies start to cook , I lightly brown the fish on both sides then add artichoke hearts and Capers to blend. Cut and dice tomato into small cubes and add them to the blend. I add a touch more olive oil and 2 tbsp of Pesto Sauce to Fish.  Lightly stirring vegetables and turning the fish from one side to the other, cooking it Throughout. Pull potatoes from the pot and sprinkle with Cinnamon and place on dish rim. Then plate vegetables, add Salmon filet to top, and spoon sauce and ingredients onto the top of the Salmon and serve.
