Epic Veggie and 3 Bean Chili

Turn on Medium heat and add 2 Tbsp of Olive oil to medium sauce pan. Add Minced or sliced garlic, Black Pepper and Garlic Powder. Stir. Add White Onion. Let garlic and onions cook for a minute or two. Add cut Zucchini, Yellow Summer Squash, and Mini Bell Peppers. Increase heat. Stir Occasionally. Cut Carrots and Celery and place them into Crock Pot or Cooking Pot. After Veggies have cooked slightly, add them to chopped Carrot and Celery mixture. Add cooked beans, ( you can use dried beans or canned. For This particular recipe I just  used 3 cans I had in the pantry. Its a lot easier and no real difference it taste in my opinion). I do rinse the beans in a strainer and then add them to the mix. After adding all main ingredients, add tbsp of Cayenne Pepper, tbsp of Paprika, tbsp of oregano, and I used 2 packages of chili seasonings, because of a lager recipe portion size.  I cooked them in the Crock on High for about an hour then reduce heat to low and continue cooking. Serve any time after you have allowed the Chili to stew.  Grab a Spoon !!!
