Here's How:
Ingredients
- Olive Oil
- Pesto Sauce
- Black Pepper
- Garlic powder
- Paprika
- Lemon or Lemon Juice
- Garlic Cloves
- Red Onion
- Celery
- Carrots
- Broccoli
- White Button Mushrooms
- Linguine or pasta of choice
Preparation
Heat 2 tbsp of Olive oil in a Medium Sauce Pan. Add Garlic, Garlic Powder, Black Pepper and Paprika. Simmer. Add Red Onion. Let Onions and Garlic absorb oils and seasonings, then add Diced Carrots and Broccoli root. ( I used the Broccoli roots and Carrots finely diced as a base for the sauce. ) Allow it to cook for a minute or two. Add Broccoli florets and increase heat. Cook oil, seasonings, Garlic, Onions, and Vegetables to cook evenly, for a few minutes then add White Button Mushrooms and add a little more olive oil at this point to make sure mushrooms cook evenly, Toss in 2-3 Tbsp of Pesto, and add Linguine and a few tbsps of the Cooked Pasta water into the Sauce Pan, Toss and reduce heat and Finish. Sprinkle w Black Pepper or Parmesan.
