How about Salmon with something other than white wine?? Yes, Pinot Noir, and Burgundian wines also pair very well with this dish, but I wanted to try something a little more unorthodox. Grenache the grape varietal, is always an excellent option to use with Salmon, Tuna, Oysters, Mussels and other fatty fish styles of cuisine. So this wine having 80 percent Grenache and 20 percent Syrah, was my out of the box selection here. The wine has medium body, tannin, and acidity. This wine is nicely spiced and racy with strong blackberry and herbal notes. I thought that this wine highlighted smoky notes in the Salmon and the acidity paired well with the artichokes and capers. I found this to be very balanced and provided a pleasurable and rewarding dining experience!!!!
